Ghost chickens were ghostly versions of normal chickens. They, alongside the ghost versions of pigs, were seen in the animal pen below the deck of LeChuck's ship while he was still a ghost. Like all ghosts, the insides of the ghost chickens can be easily seen.
Guybrush encounters the chickens whilst sneaking onboard LeChuck's ship with a magic necklace. He can aquire a ghostly feather from them.

LeChuck once again kept ghost chickens in the hold on his voyage to search for the secret of Monkey Island.
