Gullet was the First Swabbie on LeShip serving under Captain LeChuck.
He was a zombie on the unusual crew which included different types of undead and even humans. Gullet had a passion for writing poetry, though he was not particularly good at it. Putra described the poetry as 'total garbage.'
When Guybrush Threepwood joined the crew in disguise, he became the only crew member that was of lower rank than Gullet. Gullet enjoyed abusing his power and bullying his subordinate.
Eventually Gullet was thrown overboard for ruining the secret potion that LeChuck needed to use to reach Monkey Island. He became lodged in the ship's rudder, where Threepwood could further torture him by turning the ship's wheel.
Threepwood would later disguise himself as Gullet to board the ship once more by using a combination of a dark magic spell and Gullet's secret poetry.
Putra told Guybrush that her and Gullet knew each other well, them being the only two zombies on the crew. It doesn't seem that Gullet was particularly nice to her, though, as she reveals to a (disguised as Gullet) Guybrush that Gullet described her job as 'slinging hash' and that he never really said anything nice to her. She also described him as insecure about his lack of power and that his bullying was a way to compensate for that.
If Guybrush speaks to Gullet extensively while he's trapped in the rudder, Gullet reveals that he's always been cruel to swabbies, including one called Shiny Roger. Gullet also appeared to have an obsession with teeth, as he sold Shiny Roger's teeth and also had been in trouble in the past for counting LeChuck's teeth while the captain was yelling at him.
Gullet had an unidentical twin called Mullet, who he always hated and had disappeared 90 years before the events of Return.

- After using the poetry book to create the Gullet disguise, Threepwood can deliver it to the Museum Curator who is looking for work to publish. This earns the player an Achievement.
